Method
- Steep butterfly pea flowers in boiling water for 30 minutes, then strain and discard the flowers.
- Pour the blue tea into ice cube trays and freeze until solid. Freeze regular water in separate trays.
- Blend the blue ice cubes into a chunky slush, transfer to a container, and return to the freezer.
- Blend the regular ice cubes into slush and store separately in the freezer.
- Fill glasses halfway with regular ice slush, then top with blue butterfly pea slush.
- Add about 1 tablespoon of fresh citrus juice and watch the blue turn purple.
- Add more blue slush on top, then pour in your sparkling drink slowly.
- Stir gently to create swirling blue, purple, and pink colours, then serve immediately with optional garnishes like lemon or mint.
