Pineapple Spritzer Mocktail

This super easy pineapple mocktail has just 4 ingredients and comes together in 10 minutes! Fresh pineapple, creamy coconut milk, and tangy lime get blended until smooth and frothy, then topped with sparkling water for a light, refreshing tropical drink.

Ingredients
  

For the mocktails (2 servings)
  • 1 cup fresh or frozen pineapple chunks
  • 1 cup reduced-fat coconut milk
  • 2 tablespoons fresh lime juice
  • 2 cups chilled sparkling water
Optional garnish
  • Pineapple wedges
  • Lime wheels
  • Fresh mint sprigs
  • Maraschino cherries
  • Toasted coconut flakes

Method
 

  1. Add pineapple, coconut milk, and lime juice to a blender and blend until smooth and frothy.
  2. Taste and add honey or agave if you want it sweeter.
  3. Pour the mixture evenly into two glasses, filling them halfway or slightly more.
  4. Slowly top each glass with chilled sparkling water.
  5. Stir gently to combine without losing the fizz.
  6. Garnish with pineapple, lime, mint, cherries, or toasted coconut if desired, then serve immediately.

Notes

  • Fresh or frozen pineapple both work well. Frozen makes it extra cold and slushy.
  • Canned coconut milk gives the best creamy texture. Shake the can before using.
  • Fresh lime juice tastes best, but lemon can also work.
  • Add sparkling water after blending to keep the drink fizzy.
  • The blended base can be made ahead and refrigerated for a few hours. Add sparkling water right before serving.
  • For variations, add mango, ginger, mint, or extra ice for different flavors and textures.
