Non-Alcoholic Strawberry Daiquiri Recipe

My virgin strawberry daiquiri is the drink I pull out the moment the weather turns warm, and I want something icy, fruity, and completely satisfying without any alcohol involved. Frozen strawberries, fresh strawberries, lime juice, and maple syrup – blended together in about five minutes into something thick, creamy, and deeply red. The combination of fresh and frozen fruit is the key to everything here: it gives the daiquiri a texture that stays smooth and cohesive as it melts, rather than separating into a watery puddle the moment you look away.

All the Daiquiri, None of the Rum

A daiquiri is one of summer’s great drinks – icy, tangy, sweet, and refreshing in a way that very few drinks manage. The strawberry version is the most beloved variation, and for good reason. But for a long time, a decent non-alcoholic version felt impossible to get right. The rum isn’t just alcohol in a daiquiri – it’s also the ingredient that adds bite, depth, and that slight sharpness that stops the whole drink from tasting like a strawberry smoothie.

The solution is a small splash of non-alcoholic rum or a few drops of bitters. Either one adds that missing edge – the taste that signals to your palate that this is a proper drink, not just blended fruit. It’s optional, but it makes a noticeable difference, and I’d encourage you to try it at least once before deciding to leave it out.

Notes on The Flavour Profile

The strawberries are the heart of this recipe, and using both frozen and fresh is a deliberate choice that took some testing to land on. Frozen strawberries alone make a drink that’s icy but slightly one-dimensional. Fresh strawberries alone – blended with ice – produce a watery, separating texture that melts too quickly. Together, they give you the best of both: the cold, thick body from the frozen fruit and the bright, vivid flavour of fresh strawberries at their best.

Use the sweetest fresh strawberries you can find. When strawberries are properly in season, you may not need any sweetener at all – blend everything first and taste before deciding. Out of season, maple syrup is the best addition: its gentle, earthy sweetness integrates beautifully with strawberry and lime in a way that plain sugar doesn’t quite manage.

Lime juice is the backbone of any daiquiri, and fresh is always the right choice. It brings a sharp, clean tartness that wakes up the strawberry flavour and keeps the whole drink from feeling too sweet. Bottled lime juice will work in a pinch, but the difference in brightness is noticeable.

The optional non-alcoholic rum or bitters is the finishing touch that elevates this from a fruit smoothie into something that genuinely resembles a cocktail. If you don’t want to commit to a full bottle of non-alcoholic rum, a couple of drops of Angostura bitters is all you need – it adds complexity and a pleasant aromatic edge that ties everything together.

Non-Alcoholic Strawberry Daiquiri

A thick, icy, vibrantly red strawberry daiquiri made with fresh and frozen strawberries, lime juice, and maple syrup — blended smooth in five minutes with a texture that stays perfect all the way to the last sip.
Total Time 5 minutes
Servings: 2
Course: Drinks
Calories: 74

Ingredients

  • 2 cups frozen strawberries
  • ½ cup fresh strawberries
  • ½ cup fresh lime juice about 4–5 limes
  • ½ cup maple syrup or sweetener of choice (see Note 1)
  • 60 ml non-alcoholic rum or a couple of drops of bitters optional (see Note 2)
  • Water to adjust consistency if needed
For Garnish
  • Fresh strawberries
  • Lime wheel or wedge

Method

  1. Add the frozen strawberries, fresh strawberries, lime juice, maple syrup, and non-alcoholic rum or bitters (if using) to a high-speed blender.
  2. Blend on high until completely smooth. Stop and check the consistency — if it’s too thick to pour, add ¼ cup of water and blend again. Add a little more water if still needed, a splash at a time, until it reaches a thick but pourable texture.
  3. Taste and adjust. A little more maple syrup if you want it sweeter; an extra squeeze of lime if you want more tartness. Blend once more briefly to incorporate.
  4. Pour into chilled coupe or daiquiri glasses — chilling the glasses first keeps the drink frozen for longer. Garnish with fresh strawberries and a lime wheel and serve immediately.
